Sweet Potato Fries with Roasted Garlic-Blue Cheese Yogurt Sauce

YIELDS 4 servings
INGREDIENTS:
1 cup Oikos® Greek 0% Plain Yogurt
4 medium sweet potatoes
3 Tbsp. olive oil
1 Tbsp. minced garlic
Salt and ground black pepper
1/3 cup crumbled blue cheese
1/2 tsp. hot red pepper sauce
1/4 cup chopped fresh parsley and/or chives
DIRECTIONS:
Preheat oven 425°F.
Cut sweet potatoes, skin-on, into 1/4 x 1/4 x 4-inch fingers. Place in a bowl and drizzle with oil and toss to coat well to coat thoroughly.; sprinkle with garlic, salt and pepper, to taste. Place in a single layer on a parchment-lined baking sheet and roast 25-30 minutes or until the fries are golden-brown and tender. When tender and crisp, remove from oven and keep warm.
In a bowl, stir together Oikos Yogurt, blue cheese, pepper sauce and parsley and mix well. Cover and refrigerate at least 1 hour before serving with sweet potato fries for dipping.
