Roasted Brussels Sprouts with Caramelized Onion and Yogurt Drizzle
Enjoy the flavors of the season with a creamy yogurt drizzle.
PREPARATION TIME: 15 Minutes
COOKING TIME: 30-40 Minutes
YIELDS 6-8 servings
INGREDIENTS:
1 lb Brussels sprouts, trimmed
3 Tbsp. olive oil, divided
Kosher Salt and cracked pepper
1 sweet onion, diced
1 cup Dannon® Oikos® Plain Greek Nonfat Yogurt
1 tsp. smoked paprika
1-2 Tbs chopped parsley
DIRECTIONS:
Pre-heat oven 400 degrees F.
In a bowl combine sprouts, 2 Tbsp. olive oil, salt and pepper and toss well to coat. Transfer to a sheet pan and roast for 25-30 minutes or until tender and caramelized.
In sauté pan heat remaining oil, Sauté onion 18- 20 minutes on a medium heat until golden. Add paprika and sit to bend. Cool mixture slightly. Add yogurt and parsley to onions.
