Mini Roasted Peppers and Mozzarella Panini

  • 16 x 1/2-inch sliced Italian-style bread
  • 1/3cup Oikos® Roasted Red Pepper Dip
  • 2 plum tomatoes, thinly sliced
  • 1/2 cup grated Mozzarella cheese
  • 2 Tbsp. shredded fresh basil
  • Oil for grill
Mini Roasted Peppers and Mozzarella Panini


  • Lay bread slices on a clean work surface. Spread each with 1 tsp. Oikos® Roasted Red Pepper Dip. On 8 of the slices layer: the cheese, tomato and basil and top with remaining bread slices.
  • Grill sandwiches on both sides on a lightly oiled Panini griddle or grill pan until heated through and cheese is melted.
