Tortilla chips give a fun crunch to this kicky turkey meatloaf. Plus, it comes with a creamy salsa on the side.

COOKING TIME: 45-50 Minutes
YIELDS 8 servings
INGREDIENTS:
2 cups Dannon® Oikos® Plain Greek Nonfat Yogurt
1/2 cup chopped cilantro
1 tsp cumin
1 tsp ground chipotle chili powder, divided
1 cup prepared (jar) picante sauce or salsa, divided
2 lbs ground turkey
1 cup finely crushed tortilla chips
1 egg
1 cup frozen corn kernels, thawed
1 cup canned black beans, drained and rinsed
DIRECTIONS:
Preheat oven 400 degrees F
In a bowl mix together yogurt, salsa, cilantro, cumin and chipotle chili powder. Set 1 1/2 cups aside in the refrigerator.
Mix together turkey, crushed chips, egg, remaining yogurt/salsa mixture, corn, black beans and form to make a loaf. Place on a shallow baking sheet and bake for 55-60 minutes or until lightly browned and cooked through.
Let meatloaf stand 10 minutes before slicing and serving with reserved yogurt/salsa mixture.
