Parmesan Crusted Salmon

Parmesan Crusted Salmon: Parmesan, herbs and Greek yogurt are mixed together with a touch of olive oil, spread on salmon fillets and roasted until golden.

  • 1 cup Oikos® Greek 0% Plain Yogurt
  • 3/4 cup grated Parmesan, divided
  • 1 large egg yolk
  • 2 Tbsp. minced fresh parsley and chives
  • Ground black pepper, to taste
  • 4 x 6-oz. salmon fillets

Preheat oven 425°F.

  • In a bowl mix together Yogurt, 1/2 cup Parmesan, egg yolk, herbs and pepper to taste.
  • Spread the entire top of each salmon fillet evenly with 1/4 cup Yogurt-Parmesan mixture. Sprinkle top of each piece with 1 Tbsp. Parmesan.
  • Bake 18-20 minutes or until crust is golden and salmon is cooked thoroughly. Serve while hot.
