Tomato and basil combine with Greek nonfat yogurt to create a bright and creamy sauce.
PREPARATION TIME: 15 Minutes
COOKING TIME: 20 Minutes
YIELDS 8 servings
INGREDIENTS:
1 Tbsp. quality olive oil
1 sweet onion, minced (2 cups)
2 cloves garlic, minced
1/4 tsp. red pepper flakes
1 20 oz can of crushed tomatoes
1 cup Dannon® Oikos® Plain Greek Nonfat Yogurt
1/2 cup grated Parmesan + more for garnish
1/2 cup shredded basil (or 2 Tbsp prepared pesto)
Kosher salt to taste
1 Lb. penne or ziti, cooked
DIRECTIONS:
Prep Time: 15 minutes
In a sauté pan heat oil. Add onions and cook 3-4 minutes. Add garlic and pepper flakes and cook 1 minute. Add tomatoes and bring to a boil. Reduce heat and simmer sauce 15 minutes. (Cook pasta according to package directions.)
Just before serving add yogurt, parmesan and basil to the sauce and season to taste; Toss hot pasta with hot sauce and serve with more Parmesan if desired.
