This creamy, rich oat pudding will keep you warm on a cool day, and comforted when the weather heats up.
PREPARATION TIME: 3 minutes
COOKING TIME: 6 minutes
YIELDS 1 serving
INGREDIENTS:
1/2 cup quick or old fashioned oats
1/2 cup +1 Tbsp. Oikos® Greek 0% Plain or Vanilla, divided
2/3 cup water
Pinch of salt
Honey, agave nectar or brown sugar to taste
Fresh or Dried fruit (berries, chopped apricots, raisins, dried cranberries or blueberries)
Chopped toasted nuts (walnuts, pecans or almonds) to taste
DIRECTIONS:
Mix oats, 1/2 cup yogurt, water and salt together in a small saucepan, over medium heat, simmer mixture, stirring occasionally for 4-6 minutes or until thickened to desired consistency.
Transfer oatmeal to a bowl, and top with fruits and nuts as desired and a dollop of remaining yogurt.
