Peel the potatoes and cut into 2-inch cubes. Place the potatoes into a heavy saucepan equipped with a tight-fitting lid. Add about 2 inches of cold water to the saucepan. Sprinkle with the salt and pepper
Cover the saucepan and place over high heat. When you see steam escaping from under the lid, reduce the heat to low. Cook for 20 to 22 minutes or until the potatoes are fork-tender.Remove from heat and drain the potatoes.
Using a potato masher or ricer, mash the potatoes. Add the broth and Oikos® French Onion Dip and mash to combine. Season the potatoes with the salt and pepper, if needed. Sprinkle with the chives and serve with roasted meats or chicken.
