Lynn demonstrates how to make a delicious Greek Yogurt Banana Cranberry Bread that is delicious for an after dinner treat with coffee or just a snack.
PREPARATION TIME: 15-20 Minutes
COOKING TIME: 55 Minutes
YIELDS 10 Servings
INGREDIENTS:
2 cups all purpose flour
1 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, melted
2 large eggs
1 1/2 cups mashed bananas (about 3 large bananas)
2/3 cup Dannon® Oikos® Plain Greek Nonfat Yogurt
1/2 cup chopped walnuts
1/2 cup dried cranberries, such as Craisins
1 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F.
Spray a loaf pan with nonstick cooking spray and set aside.
In a large bowl, mix all of the above ingredients, stirring well. Pour batter into prepared pan and bake for 55 minutes or until a cake tester or toothpick come out clean.
Cool for 10 minutes in the pan on a wire rack. Remove from pan and cool completely on wire rack.
