Spiced Apple Cake

A beautiful Bundt cake studded with fresh apples and walnuts, made with whole wheat flour and Greek nonfat yogurt.

  • Yields: 10 servings


  • 2 cups sugar

  • 1 cup unbleached all-purpose flour

  • 1 cup whole-wheat flour

  • 4 teaspoons cinnamon

  • 1 teaspoon salt

  • 2 teaspoons baking soda

  • 2 eggs

  • 1 cup vegetable oil

  • 1/4 cup orange juice

  • 1 cup Oikos® Vanilla Greek Yogurt

  • 4 cups Granny Smith apples (4-6 apples) cored, peeled, and chopped

  • 1 cup walnuts

  • Vanilla ice cream or frozen yogurt, to serve


  1. Preheat oven to 325°F.

  2. Prepare a bundt pan with cooking spray.

  3. In a large bowl combine dry ingredients and set aside.

  4. In a medium-size bowl, whip eggs until frothy (3-4 minutes).

  5. Add oil, orange juice, and yogurt. Mix together.

  6. Add wet ingredients to dry ingredients and fold together until well combined.

  7. Fold in apples and walnuts.

  8. Pour batter into cake pan.

  9. Bake for 1 hour or until toothpick inserted into the middle comes out clean.

  10. Let cool before removing from pan.

  11. Serve warm with a scoop of vanilla ice cream or frozen yogurt.
