Creamy Cucumber Chicken Salad

INGREDIENTS:

  • 2 cups cooked, diced boneless chicken meat (9 oz.)
  • 1/2 cup Oikos Cucumber Dill Dip
  • 1 cup diced celery
  • 1 cup quartered cherry tomatoes
  • 1/2 cup chopped scallion
  • 4 large butter lettuce leaves
Creamy Cucumber Chicken Salad

DIRECTIONS:

  • In a bowl, gently toss diced chicken with Oikos Cucumber Dill Dip until coated well. Stir in celery, tomatoes and scallion. Cover and refrigerate until ready to serve.
  • To serve, divide salad among 4 large lettuce leaves, approximately 1 cup per serving.
