Chopped Nutritious Salad

A beautiful, classic salad of romaine hearts topped with a creamy, Greek nonfat yogurt salad dressing.”

INGREDIENTS:

  • 1 x 5.3 oz pkg. Oikos® Greek 0% Plain
  • 1 Tbsp red wine vinegar
  • 1 Tbsp low fat mayonnaise
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp chopped parsley
  • 2 hearts romaine hearts shredded (10-11 cups)
  • 1 cup halved grape tomatoes
  • 1 cup diced seedless cucumber
  • 1/2 cup diced red pepper
  • 1/2 cup minced purple onion
  • Salt and pepper to taste

DIRECTIONS:

  • In a large bowl combine yogurt, vinegar, mayonnaise, parmesan and parsley, mix well.
  • Add remaining ingredients and toss to coat. Serve immediately w/ croutons if desired.
