- 1 x5.3 oz pkg. Oikos® Greek 0% Plain (1/2 cup)
- 1 Tbsp. prepared pesto
- 1 Tbsp. chopped parsley
- 1 tsp. white vinegar or lemon juice
- 3 Ripe tomatoes sliced into 4 slices each
- 1 Tbsp. toasted pine nuts
- In a bowl combine yogurt, pesto, parsley and vinegar, mix well. (This can be used as a vegetable dip)
- Slice tomatoes and place on a platter. Top the tomatoes with yogurt pesto and sprinkle with toasted pine nuts.
