Pesto Drizzle on Jersey Tomatoes

Vibrant tomatoes, herbaceous pesto, and tangy Greek nonfat yogurt combine for a simple summer-inspired treat."



  • 1 x5.3 oz pkg. Oikos® Greek 0% Plain (1/2 cup)
  • 1 Tbsp. prepared pesto
  • 1 Tbsp. chopped parsley
  • 1 tsp. white vinegar or lemon juice
  • 3 Ripe tomatoes sliced into 4 slices each
  • 1 Tbsp. toasted pine nuts


  1. In a bowl combine yogurt, pesto, parsley and vinegar, mix well. (This can be used as a vegetable dip)
  2. Slice tomatoes and place on a platter. Top the tomatoes with yogurt pesto and sprinkle with toasted pine nuts.
