Ingredients

  • 1 x 12-oz container Oikos Cucumber Dill Dip
  • 2 cups reduced sodium vegetable broth (or chicken)
  • Pinch ground red pepper
  • 1/4 cup chopped scallions
  • 1/4 cup diced red bell pepper

Directions

  1. In the container of a blender, process the Oikos Cucumber Dill Dip, broth and pepper on low until smooth. Refrigerate until ready to serve.
  2. To serve, pour 1 cup portion of chilled soup into a bowl or mug and sprinkle top with scallions and peppers to garnish.
