Shrimp Saute

INGREDIENTS:

  • 1 Tbsp. olive oil
  • 1 lb. shrimp, peeled and deveined
  • 3 Tbsp. shallots minced
  • 1 cup Oikos® Sun-Dried Tomato Greek Yogurt Dip
  • 1/3 cup hot water or chicken or seafood broth
  • 2 Tbsp. chopped fresh parsley
  • 4 cups hot prepared pasta or rice
Shrimp Saute

DIRECTIONS:

  • Heat oil in a saute pan. Add shallots and shrimp and cook 3 minutes. Remove from heat and stir in water of broth, Oikos® Sun-Dried Tomato Greek Yogurt Dip and parsley toss to coat. Serve over 1 cup cooked pasta or rice.
