Roasted Brussels Sprouts with Caramelized Onion and Yogurt Drizzle

Roasted Brussels Sprouts with Caramelized Onion and Yogurt Drizzle
Ingredients
  • 1 lb Brussels sprouts, trimmed
  • 3 Tbsp. olive oil, divided
  • Kosher Salt and cracked pepper
  • 1 sweet onion, diced
  • 1 cup Dannon® Oikos® Plain Greek Nonfat Yogurt
  • 1 tsp. smoked paprika
  • 1-2 Tbs chopped parsley
Directions
  1. Pre-heat oven 400 degrees F.
  2. In a bowl combine sprouts, 2 Tbsp. olive oil, salt and pepper and toss well to coat. Transfer to a sheet pan and roast for 25-30 minutes or until tender and caramelized.
  3. In sauté pan heat remaining oil, Sauté onion 18- 20 minutes on a medium heat until golden. Add paprika and sit to bend. Cool mixture slightly. Add yogurt and parsley to onions.
