Creamy Cucumber Chicken Salad
Ingredients
  • 2 cups cooked, diced boneless chicken meat (9 oz.)
  • 1/2 cup Oikos Cucumber Dill Dip
  • 1 cup diced celery
  • 1 cup quartered cherry tomatoes
  • 1/2 cup chopped scallion
  • 4 large butter lettuce leaves
Directions
  1. In a bowl, gently toss diced chicken with Oikos Cucumber Dill Dip until coated well. Stir in celery, tomatoes and scallion. Cover and refrigerate until ready to serve.
  2. To serve, divide salad among 4 large lettuce leaves, approximately 1 cup per serving.
