Celeriac and Apple Mash

This Mediterranean favorite root vegetable gets mashed up with apples, blue cheese, and Greek nonfat yogurt.

Celeriac and Apple Mash
Ingredients
  • 1 large celeriac bulb, peeled and chopped into 1” cubes (1-1 1/2 pound)
  • 1 large crisp apple, cored and roughly chopped with peel on
  • 4 large shallots, chopped
  • 1 teaspoon fresh thyme
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup crumbled blue cheese
  • 1 cup Oikos Plain Greek Yogurt
Directions
  1. Preheat oven to 375 degrees F.
  2. Spray a 6x8 baking dish with cooking spray.
  3. In a large bowl toss celeriac, apples, shallots, thyme, olive oil, salt, and pepper.
  4. Spoon into baking dish and bake for 40 minutes.
  5. Remove from oven and place in a food processor.
  6. Pulse until mixed but still coarse.
  7. Pulse in blue cheese and yogurt.
  8. Spoon into serving dish and just reheat in oven before you serve.
